First of all, I made up the recipe. That alone makes it suspect.
Do you remember The Man From Snowy River? Do you remember what Jim
told Jessica about not eating Spur's Wallaby stew? That was also
intended as a bit of humor.
Yes, I think it would be hard to catch a Wallaby here in the States.
But I encountered some Wallabies at Healesville Sanctuary, just south of
Melbourne. They were a lot of fun.
